How to change/ undo element merging ?

Does this mean the only available option is to remove the elements, or maybe the whole diagram, and re-create?
That’s right. For actions that aren’t undoable, we would either mention it in the dialog box description (like merging element), or a warning will show talking about the consequence and asking for confirmation (like applying design pattern). So it is advisable to save the project first before performing those non-undoable actions, so you can revert the changes by simply re-opening the project.
